Cooking Without Borders

To realize the global community in which we live, Cooking Without Borders looks to expand the focus of students through a cultural exchange involving travel, host arrangements and public involvement. In essence, Cooking Without Borders is a mission to get students involved, engaged and energized about discovering food from around the world.

This summer, 11 students and their 2 instructors travelled to Ripatransone, Ascoli Piceno in the Marche region of Italy. The planning for the trip started over a year ago, spawned by a visit from a delegation from the region. Since that time, with assistance from various members of the Italian-American community, business sponsors, education partners, families and friends, the students have been actively engaged in creating a worthwhile trip.

In November, 2009, Paolo D'Erasmo, Mayor of Ripatransone and Chef Sandro Capecci, along with delegates from the region, spent time with the Culinary Arts students to create a menu and authentic fare for a reception at the Italian-American Cultural Center in Wilmington. The year prior, Chef Capecci worked with the students to produce food for some 2200 attendees at the Vendemia di Vinci Celebration on Wilmington's Waterfront. With a relationship established, including a trade partnership with the City of Wilmington, students were invited to travel to Italy to further explore the food of the country.
